Easy Cheese-free : Dairy free ‘cheesy sauce’
This tasty sauce is also a healthy low fat alternative to cheese.
All amounts are approximate. Makes enough for 4-6 (about 2 litres of sauce) depending how you use it.
1 tbsp vegetable oil
1 large cauliflower
2 medium onions
1 – 2 cloves garlic
1 litre (approx.) stock (vegetable)
Salt/pepper: season to taste
4 tbsp + (or to taste) Nutritional yeast (available from health shops) optional but gives a savoury taste and is healthy.
Fry the onion in oil until soft, add the chopped or crushed garlic, add cauliflower broken into small florets. Add the stock so it half covers the cauliflower. When soft, allow to cool slightly before putting in a food processer, or liquidiser etc. until smooth and thick (it should be pourable).
Use like a cheese sauce.
Favourite is with cauliflower: steamed, or sliced into stakes and roasted in a hot oven (approx 200C) for about 20 mins.
With a baked potato.
Or with pasta with vegetables (like courgettes/peas/green beans/spinach/chard)
