1. ‘Cheesey’ Carrot bake1 kg Carrots – grated300g Strong Cheddar Cheese (or vegan alternative) – grated
Mix both and bake for 30 minutes, or until you get a crispy top. An amazing Sunday (nut) -Roast accompaniment!
2. Spiced baked carrots
Scrub and/or peel 500g carrots as preferred and cut into lengths or rings. Place in a baking dish. Add zest and juice of a small orange, a teaspoon of ground coriander, half a teaspoon ground ginger and a little salt and some freshly ground black pepper to taste. Add 2 teaspoons olive or sunflower oil. Mix well, cover with lid and pop in the oven for about 45 mins while cooking main course.
A nice vegan accompaniment and saves fuel.
